September: the harvest is approaching…!

End of September:  our olives begin to change color, the “veraison” process is started!
Veraison is the technical term used to indicate the ripening process of the olives. It is important to know that the intensity and timing of this process varies depending on many factors: olive tree variety, climatic conditions, load of fruits …
The veraison is the stage when the olive starts to accumulate oil (!!), a process that will go on until mid-late October when the oil accumulation into the olives will slow heavily down until it will stop because of drop in temperatures.
That will be the right time to begin – finally – the harvest!
